Etna Rosso DOC - Calarittu
Description: From old Nerello Mascalese vines cultivated as sapling on the east side of Etna at an altitude of 700m above sea level, Etna Rosso presents itself with a pleasing ruby color and a fruity, sweet aroma, where the hints of ripe fruit and spicy notes complement each other.
Grapes: 98% Nerello Mascalese; 2% Nerello Cappuccio
Vinification: Soft pressing, cold static decantation and alcoholic fermentation in steel. The grapes remain on the skins for 14 days,
with a pumping over and two punching down per day
Aging: Maturation in steel for 5 months and in wood for 18 months (Barique in French oak, 225lt oak barrels) . The wine lends itself to aging in the bottle, completing its maturation.
Pairings: Fish and roast meat dishes
Serve at 14-16° C
